KAWARTHA LAKES-Are you planning a BBQ party this summer? We’ve got some tips to help you perfect your grilling technique.
Chef Corby-Sue from HelloFresh says it’s time to switch it up and get your “Grill On”!
“One way to keep a sense of routine is to meal prep and plan ahead. Whether you are away at the cottage or chilling at home, knowing what you are going to cook for you and your family can ease your mind and create some structure” says Corby-Sue Neumann, Director of Culinary at HelloFresh.
BBQ’ing a meal is a great way to switch up the flavours and enjoy your time outside. Chef Corby-Sue says you can BBQ almost anything including her favourite dessert, S’mores.
TIPS for steak:
- This will vary based on size of steak:
- Before placing your steaks on the grill, coat each side with oil and season with salt and pepper in a small bowl.
- Next, you’ll want to let them sit at room temperature for 30 minutes.
- Preheat your grill to a high heat and cook the steaks for 3 minutes per side for medium-rare, 1.5-2 minutes for rare, and 4 minutes if you like your steak well done.
- To finish, allow 5-10 minutes of cooling time before you eat.
Grilled Double Beef Burgers
Time to fire up the grill for a delectable burger experience. These beauties are beefy, with two stacked patties, and they’re topped with bacon, pickles, cheddar cheese and a tangy, zippy chipotle-mustard mayo, all on an artisan bun. Don’t forget napkins – the best things in life are worth getting a little messy for!
TIPS:
- Plan and prep ahead: Make your burgers the night before. I like to shape my patties and press them between deli lids, which is a never-fail CHEF technique! No thumbprints, large indent and dimpled with a knife needed.
Wins: reduces hot hands melting the natural fat, less shrink, suits a pan or grill application and allows for a crispy exterior and juicy inside!
- 5 simple steps to brilliant burgers:
1. Keep the burgers chilled before grilling
2. Hot grill
3. Lightly oil the burger, both sides, not the grill
4. Leave space for a safety zone, ⅓ of the grill so you can move burgers if they flare up
5. 4 mins one side, don’t press, 4-5 mins to finish (160 internal temp)
BBQ your desert: S’more’s
- PREHEAT grill to medium or preheat oven to 450°F. For each s’more, top one graham cracker square with one candy bar half, one marshmallow and another graham cracker square. Repeat with remaining graham crackers, candy and marshmallows. Wrap in tin foil and place on the grill for 4-5 minutes. ENJOY!
Fun S’more UPGRADES
- You can use cookies instead of graham crackers
- Use rice crispy treats instead of just marshmallows to mix and match filling
- Different colour marshmallows
- Use different chocolate bars based on your guests’ favourites
REMEMBER: Planning ahead can help you find calm in the chaos of summer. Just because it is summertime doesn’t mean you can’t have a routine.
- Trying to find ways to jazz up a recipe? Try swapping or adding an ingredient you’ve never tried before
- The grill is your best friend when it comes to flavour, try grilling something you’ve never grilled before like peaches or pineapple. Additionally, try grilling chicken breast to add flavour you wouldn’t get with other cooking techniques
- BBQs allow you to cook multiple foods, in different ways at the same time, saving you time and stress. Wrap potatoes in a foil pouch, grill burgers, toast your buns and grill vegetables all in one go – minimal cleanup!
